This is amazing! Cucumber contains lignans namely pinoresinol, lariciresinol, and Seco iso lariciresinol. When we consume these lignans the bacteria in our digestive tract, convert them into enterolignans. The enterolignans have the ability to bind estrogen receptors and have both pro-estrogenic and antiestrogenic effects. This action significantly reduces estrogen-related cancers such as breast, ovary, uterus, and prostate. Amazing!
 
Cucumber contains triterpene phytonutrients called curcubitans. These curcubitans block cancer cell development and survival pathways. Thus the cucumber has significant anti-cancer properties.

One cup of cucumber contains Vitamin K, Molybdenum, pantothenic acid, copper, potassium, manganese, vitamin C, vitamin B, manganese, and biotin.

Cucumbers are the best friend of diabetic patients. Cucumber juice contains a hormone needed by pancreatic cells for producing insulin. This property is highly beneficial for diabetic patients.

Kiwi Cucumber Salad

Ingredients

Cucumbers- 2
Kiwi -2
Lime juice- 1 teaspoon
Chili flakes- 1 teaspoon
Salt to taste

Method

·        Cut the cucumber into pieces
·        Remove the skin of Kiwi fruit and cut it into pieces
·        Gently add them to a bowl
·        Add lime juice, chili flakes, and salt
·        Garnish with mint and coriander leaves
·        Cool, it and serve.
·        Wow!
Cucumber with freshly ground pepper salad
Ingredients
Cucumber- 4
Freshly ground black pepper
Curry leaves
Salt to taste
Method
·        Cut the cucumber into long thin strips
·        Sprinkle freshly ground black pepper over it
·        Add salt, garnish and serve
Yogurt Cucumber Salad
Ingredients
Cucumber- 4
Yogurt -3 teaspoons
Salt to taste
Few sprigs of coriander leaves.
Method
·        Cut the cucumber into small pieces
·        Spread yogurt on the top
·        Add salt to taste
·        Garnish and serve
·        Delicious!
