Why is Kale and Quinoa Considered to be Very Healthy?

I was recently reading some articles which said kale and quinoa have become very famous among health enthusiasts. In this post we shall see the health benefits of kale and quinoa.
Kale
It is a form of cabbage mostly closer to the wild variety. Kale is very high in beta carotene, vitamins K and C, lutein and zeaxanthin. It is also rich in calcium. Kale contains sulforaphane a substance which has anticancer properties. You should never boil kale as boiling may destroy this substance. It is better to steam it for maximum nutrition and flavor.
Kale contains indole-3 carbinol which boosts DNA repair in cells and blocks the growth of cancer cells. Kale is very effective against the cancer of bladder, ovary, breast and colon and prostate. It also helps in body’s detoxification system. It helps to reduce oxidative stress.
Quinoa
It is a grain like crop grown mainly for its edible seeds. Quinoa has very high nutritional value. It has very high amount of protein. It is a good source of dietary fiber and is free of gluten so it is very easy to digest.
Quinoa was called as the “gold of Incas” and also the “mother grain.” It is a very good choice for vegans. Quinoa is rich in amino acid lysine which helps in tissue repair. It is very good for persons suffering from migraine headaches, diabetes and atherosclerosis.
Quinoa gives antioxidant protection, protects against breast cancer and prevents childhood asthma. It prevents gallstone formation because of its rich insoluble fiber content. It contains phytonutrients which increases the body’s overall health. Quinoa lowers the risk of type 2 diabetes.
It protects the body from ischemic stroke, insulin resistance, obesity and premature death. Add it to your diet and be healthy.
