Summer is a great time to try out new vegetable recipes. It is a time to relax, have fun and enjoy good food with family and friends. Here are some of great summer veggies to taste.
Corn- the corn also comes in an array of colors such as red, purple, black, pink and blue. But the yellow hue is the famous one. The corn is rich in antioxidants and fiber. Research studies say that corn supports the growth of friendly bacteria in the large intestine. It facilitates the intestinal cells to stay healthy and reduces risk of cancer. It is good for blood sugar, digestion and for enhancing the nutrition of the food.
Cucumbers- contain compounds called lignans which reduces heart diseases and different types of cancer such as breast, uterine, ovarian and prostate cancer. Cucumbers have antioxidant and anti inflammatory benefits. They are a rich source of phytonutrients called curcubitacins which possess anticancer properties. Okra-  it is low in calories and an excellent food for those attempting to lose weight. Okra is rich in dietary fiber and prevents constipation. It contains good amounts of antioxidants. Fresh pods are rich in vitamin A and folates. Okra is a good source of B complex vitamins. The pods are a good source of vitamin K, iron, calcium, manganese and magnesium. Okra is otherwise known as lady’s finger.
Peas-  contain a unique substance called coumestrol which lowers the risk of stomach cancer. Peas have antioxidant and anti inflammatory benefits. They are low in fat and contain good amounts of beta carotene. Peas are good for the heart, support blood sugar regulation and protects against stomach cancer. They are a great source of omega 3 fatty acids.
